What is Chrysanthemum 'Aboukyu'
The edible chrysanthemum 'Aboukyu' (scientific name: Chrysanthemum morifolium 'aboukyu') belongs to the Asteraceae family and the Chrysanthemum genus. This variety is a specialty of Hachinohe City in Aomori Prefecture, Japan, producing vivid yellow flowers. The plant grows to a height of 50–100 cm. From October to November, it extends a compound inflorescence from its flower stalks, blooming in small yellow capitulum flowers with only ray florets. Similar to Enmeiraku (Chrysanthemum morifolium 'Enmeiraku')—a variety with purple flowers—Aboukyu is used as an edible chrysanthemum. It has a softer texture than Enmeiraku, with a distinctive fragrance and mild sweetness.
Aboukyu can be enjoyed fresh, as tempura, in ohitashi (lightly cooked and seasoned greens), namasu (vinegared salads), sunomono (vinegared dishes), or even dried like dried wakame seaweed for use in miso soup.
