What is Calypso bean
Calypso beans or Panda beans (scientific name: Phaseolus vulgaris 'Calypso') is a native herb of Hokkaido and is a cross breed of an annual herb of family Fabaceae. It will be about 45 ~ 90 cm tall. When planting in the summer, white to light purple flowers will bloom in autumn. After the flower, a blue pod is formed, it becomes mature and becomes pale yellow. There are 4 to 6 fruits of white / black pattern in the pod. It is also called Orca Bean (Orca Bean), Shuchi Bean, Panda Bean, Ying-Yang Bean because the pattern of the fruit is similar to the orca, panda, Yin Yang fish taiji figure. We eat boiled beans, salted beans, boiled dishes, salads, soup. Fresh beans are black-and-white patterns, but when they are cooked black turns brown. It is known as an expensive and unusual bean.
