What is Kuwanoki-mame

Kuwanoki-mame (scientific name: Phaseolus vulgaris 'Kuwanoki-frou') is a specialty of Yamagata City (formerly Miyama Town), Gifu Prefecture, and is a vine vegetable in the bean family, Fabaceae. It is a member of the Fabaceae family and is recognized as a "Hida-Mino Traditional Vegetable". When fully ripe, the pods and beans are covered with a red kasuri pattern. It is boiled raw and used in boiled, fried, simmered, or stir-fried dishes. The pods are dried and preserved, then put back in water and cooked with the pods as Kuwanokimame-ni (mulberry bean stew).
Its Japanese name is derived from the fact that the seeds were sown at the base of the mulberry tree and cultivated by letting them crawl on the tree.

Common name: Kuwanoki-frou, scientific name: Phaseolus vulgaris 'Kuwanoki-frou', also known as mulberry, harvested in October, uses: boiled, fried, stewed or stir-fried, boiled beans, tempura, confectionery.
