What is Chorogi

Chorogi (Stachys sieboldii), also known as Chinese artichoke, is a perennial plant in the mint family Lamiaceae, originating from China. It grows to a height of about 60 cm. In June and July, it blooms with light bluish-purple flowers. The edible tubers, which are swollen underground stems, are harvested in October and November. The tubers are white and twisted, resembling white macaroni at the ends of long underground stems.

You may have seen chorogi as the interesting red "otanko-nasu" shape served with black beans for New Year's. This is chorogi colored red with plum vinegar, considered an auspicious food for the New Year. It can also be eaten pickled in salt or soy sauce.
